This is a fresh, easy side-dish with beautiful Christmas colors and fall/winter flavors. It requires no extra salad dressing and, therefore, has no added sugar or preservatives (you won't even miss them). Throw it alongside your Christmas ham or anything else, and you'll be well on your way to getting your '5 a day'.

Serves: 2 | Total Prep Time: 15-20 minutes
1 bunch asparagus
Break off woody ends of asparagus and then blanch (fill a pot with enough water to cover asparagus, bring to a boil, dump asparagus in and boil for 2-4 minutes or until barely soft, then plunge into ice water until cooled). Dry asparagus and chop into bite-sized pieces.
Lightly toast almonds by placing on hot pan and moving around until all sides are lightly browned. Then remove from heat and allow to cool.
Chop zucchini into bite-sized pieces
Remove seeds from pomegranate
Lay down spinach in bowl. Then top with asparagus, zucchini, pomegranate, almond and pumpkin seeds. Add zest and juice of clementine and a drizzle of olive oil and pinch of salt (optional).
