Turkey Meatballs
I've been on a bit of a hiatus for a couple months, but I couldn't stay away too long during my favorite season: fall! Here's some good ol' classic comfort food that's sure to fill up the whole family!

Turkey Meatballs
Yield: 24 meatballs | Prep Time: 15 min | Cook Time: 25-30 min

Ingredients:
2 lbs ground turkey (or substitute with whatever meat you like)
1 cup old fashioned oats
1 T dried basil
1 T dried parsley
1/2 cup Parmesan cheese
2 eggs
salt
Olive oil
4-5 cups Spaghetti Sauce
1 1/2 cups Monterey Jack cheese (for topping)
1/4 cup grated Parmesan cheese (for topping)
Measure oats into food processor, and blend until resembling a coarse flour
Add turkey, oat flour, 1 T basil, 1 T parsley, 1/2 cup Parmesan cheese, 2 eggs, and salt to a large mixing bowl, put on some gloves (if you want), and squish those ingredients until well-combined
Get a large, oven-safe pan with a splash of olive oil heating on the stove at medium
Use your hands to form approx 24 golf-ball-size meatballs. Then transfer them to the hot pan to brown
Cook for 10-15 minutes, occasionally turning
Pour 4-5 cups sauce over the meatballs, then sprinkle 1 1/2 cups monterey jack cheese and 1/4 cup Parmesan over the top
Cover and leave on the stove top for 5-10 more minutes
Transfer the pan to the oven and broil for 5-7 more minutes or until the cheese is starting to brown
Remove pan from oven and serve over noodles, with quinoa, or however you like to eat your meatballs
