Rice,Vegetables, and Chicken Sausage One Pan Dinner
When my husband was in college, he lived off of a dish he called "fodder". It consisted of rice, Polish sausage, frozen veggies, and a whole lot of cheese on top for flavor. Once, we got married, I decided to pay homage to his culinary creation. We've now kicked it up a notch with some seasoning in lieu of cheese, and a preservative free chicken sausage.

Yield: 12 cups | Prep Time: 5-10 minutes | Cook time 20-30 minutes

Ingredients:
4 cups cooked brown rice (2 cups uncooked)
1 pack Aidell's chicken apple sausages
2-3 medium yams
1 yellow onion
2 garlic cloves
1 1/2 T dried thyme (or fresh, if you have it)
lemon juice
salt
pepper
2-2 1/2 cups frozen peas
1 T olive oil
Finely chop garlic and onion. Then chop yams and sausage into bite size pieces.
Heat a large pan on medium
Oil the pan, then saute onions and garlic for 3-5 minutes or until soft and translucent
Stir in yams and sausages, then cover and allow to cook for 10-15 minutes
Add the previously cooked rice by layering it on top of the other ingredients, then season with thyme, salt, pepper, and juice of 1/2 - 1 lemon
Pour the peas on top and return the lid to finish cooking (5-15 minutes or until yams are soft). Cook time will vary depending on how big you chop your yams
Once it's finished cooking, stir together and serve.
