Rainbow Slaw
This is an old recipe of mine that I decided to revisit, and it was actually my 3-year-old, who came up with the final addition to it: beets. I love just how simple this is. There's no dressing, sauce, or seasoning. Each vegetable (or fruit) speaks for itself, and each plays a role in making the rainbow. So switch up that same old salad, and get your veggies in with this rainbow slaw. And make it your own. If you don't like an ingredient, use a less. If you really like something, use more. Make whatever ratio you like it. And enjoy the surprising different flavor combination in every bite.

Rainbow Slaw
Yield: approx. 8 cups | Total Time: 10 minutes

Ingredients:
2-3 apples 1 yellow squash
1 zucchini
2 carrots
1 beet
1/4 cup red cabbage
1 lemon
Coarsely grate everything (except the lemon) into a bowl, using whatever proportions you like
Squeeze the juice of 1 lemon over top
Toss everything together
Eat as a refreshing side dish, or put on top of lettuce to make a more colorful, flavorful salad.
