Pumpkin Spice Granola
I love fall. I'm sure I've said it before. And I'm sure I sound like every other blogger/millennial woman. But I've always loved all things fall. And this pumpkin spice granola is just a little bit of heavenly fall. I love that it's not loaded with sugar and it has both simplicity and depth of flavor. When I made my mom try a pinch of it, her reaction was "OH! That's good. Give me a bowl." She then scolded me for not making enough to leave a gallon bag for her. So basically you need to make this recipe. And make sure to make extra for your mom.

Pumpkin Spice Granola
Gluten Free | Dairy Free | Preservative Free | Refined Sugar Free
Prep Time: 3 min | Cook Time: 25 min | Cool Time: 5- 10 min
Ingredients*:
1/4-1/2 cup coconut oil
1/2 cup pepitas
1/2 cup sliced almonds
1 cup Pecans
3 cups Oats
1 T vanilla
1 cup chopped Dates
1/8 tsp sea salt
1 1/2 T Maple syrup
1 T Cinnamon
1/4-1/2 tsp Nutmeg
1/8-1/4 tsp Ground ginger
Place a large pan on the stove and turn the heat on to medium
Chop pecans to desired texture
Add oats, sliced almonds, pecans, pepitas, and coconut oil to the pan, and toast for 15-20 minutes, stirring occasionally
Finely chop dates and add them to the pan, along with cinnamon, nutmeg, ground ginger, and sea salt and stir well
Once everything is evenly distributed, drizzle maple syrup all over, and stir in
Cook for a few more minutes, stirring frequently to prevent burning
Remove from heat and allow to cool in the pan
Enjoy as a snack or in a bowl with some milk poured over
