I usually don't use marinades for two reasons: 1) Honestly, I forget to get it started far enough in advance. 2) Most of them are full of preservatives. I can't do much about the first one except put a reminder on my phone. This super easy recipe is an alternative to the preservative/sugar/sodium laden marinades you normally find. So, set a reminder on your phone to get this one going in time for dinner today!
Preservative Free Italian Marinade
Prep Time: 5 minutes | Chill Time: 2 hours-Overnight
1/2 T Dried Basil
1/2 T Dried Parsley
1/4 T Dried Oregano
2 T Olive Oil
Pinch of Salt
Pinch of Pepper
4 Medium-Sized Chicken Breasts (approx. 2-2.5 lbs)
Measure everything except chicken in a gallon-sized bag
Squish it around a little to mix everything
Add the chicken breasts, seal the bag, and squish/tip the bag until the seasoning is equally disbursed over the chicken
Refrigerate for at least 2 hours (or up to overnight)
Cook chicken in instant pot, pan, grill, or however you like. Then slice and serve as a main dish with sides or on sandwiches, pasta, salad, or even tacos!
