Pico de Gallo
Pico de Gallo means beak of rooster. If someone can explain what that has to do with anything, I'd be very interested to hear. Anyway, this is a simple recipe that will make your whole kitchen smell fresh. That's just the best way to describe it. And as a bonus, you get all the phytochemical colors in at once!

Pico de Gallo
2 C chopped tomatoes
2 bell peppers
1/4 chopped cilantro
1 clove garlic
3 green (spring) onions
pinch salt
2 limes
1/4 cup red cabbage
Chop all vegetables into small pieces (don't worry about making them even, though)
Finely chop garlic and cilantro (including the stems)
Dump all chopped ingredients into a bowl
Zest one lime into bowl and juice both limes onto the vegetables
Add a pinch of salt
Use your hand to mix everything together, squishing it a little as you go so the juices come out
Taste, adding lime juice or salt as needed
