Perfectly Simple Asparagus
I normally live by the motto "Go big or go home", but the more I tried to add lemon, garlic, Parmesan cheese, or bread crumbs in order to make the perfect, asparagus side dish, the more I found that "less is more" could actually be the answer in this case. So, I went back to the basics: four ingredients and a 15 minutes cook time. This recipe might seem too simple to be true, but that's what makes it so great (and makes my four-year old gobble it up). So, here's my super quick and easy asparagus recipe. I like to pair it with pasta or "meat and potatoes" type meals. Let me know what you serve it up with!

Perfectly Simple Asparagus
Yield: 2-3 servings | Prep Time: 2-5 minutes | Cook Time: 15 minutes
Ingredients:
1 bunch asparagus (about 1 lb)
salt
pepper
1-2 T olive oil
Wash asparagus and remove ends
Drizzle olive oil into a medium-size pan, and turn the heat on to medium
Add asparagus, a pinch of salt, and pepper (if desired)
Gently toss to distribute everything
Place lid on pan and cook for 10-15 minutes, shaking the pan occasionally to prevent one side from cooking more than the others. You'll know they're done when they've turn a vibrant green color and are soft when pierced with a fork. Remove from the heat just before they start to get shrively.
