Peanut Butter Cookies
I've probably said this before, but I have a serious sweet tooth, so I love finding ways to still get my sugar fix without the addicting consequences of refined sugars. Whether you are looking for a gluten free/dairy free/refined sugar free treat or not, you are sure to love these!

Super Soft Peanut Butter Cookies
Yield: 12-16 cookies | Prep Time: 10 min. | Cook Time: 6-8 minutes

Ingredients:
1 cup homemade peanut butter
1 cup dates
1/2 - 1 cup water
1 tsp vanilla
1/8 tsp salt
1/2 T baking powder
1 1/4 - 1 1/2 cup almond flour
In a saucepan, simmer dates and water for 5-7 minutes. If the dates look dry (as in, you bought the really cheap brand), use the full 1 cup of water. If they're soft and sticky, only use 1/2 cup of water
While the dates are simmering, mix salt, baking powder, and 1 1/4 cup almond flour
Let the dates cool for 1-2 minutes and then transfer to a food processor, add vanilla, and pulse until smooth
Add date mixture and peanut butter to dry ingredients and mix until combined. If it looks too wet, you can add the remaining 1/4 cup of almond flour
Form into 12-16 balls on a cookie sheet, and then use a fork to squish the cookies down
Bake at 350° for 5-7 minutes
Immediately transfer to a cooling rack, and allow to cool completely before eating (this allows the middle to set up and the cookies to stay together better)
Be shocked that these are completely free of gluten, dairy, or refined sugars.
