Breakfast for dinner is one of my favorite meals (that could be why we have it every week), and who doesn’t love pancakes? These pancakes are easy to make and even easier to eat. And you can store them easily in the freezer for later use. (Just be sure to put parchment paper between them so they don't freeze together.) Serve these hearty, delicious pancakes with scrambled eggs or a smoothie, and top them with whatever you want—cinnamon sugar, peanut butter (see my homemade PB recipe!), chocolate chips, honey, or homemade berry syrup with desiccated coconut sprinkled on top. Hearty, Homemade Pancakes

3/4 cup white flour

3/4 cup whole wheat flour

1 1/2 t baking powder

1 pinch of salt

1 egg

¼ cup applesauce

1 - 1 1/2 cups milk

1 capful vanilla

A dash of cinnamon

Coconut oil (to grease the pan)

  1. Mix flour, baking powder and salt in a mixing bowl

  2. Add egg, vanilla, applesauce and milk to the dry ingredients, adding milk slowly; then add cinnamon, and mix everything together, making sure to leave some lumps in the batter

  3. Heat pan on medium heat and grease the pan with coconut oil (or whatever you like, that’s just my preference)

  4. Pour batter onto greased pan. I usually use a ¼ cup measuring cup as a guide to measuring them out

  5. You know they’re ready to flip when the edges look dry and the bubbles are popping
