Oat & Fig Muffins
Here's a grab-and-go breakfast that won't leave you with a sugar crash an hour later. These muffins contain whole grain and fiber with no butter or oil. They're soft, moist and packed with flavor and are great warm or cold, plain or with peanut butter (click the link for my homemade peanut butter recipe!) for a little extra protein.

Oat 'n' Fig Muffins

Ingredients:
Dry:
2 cups rolled oats
1 cup white flour
½ cup whole wheat flour
1½ tsp baking soda
½ tsp salt
1 T cinnamon
½ cup brown sugar
2 T almond meal
2 T flax
¾ cup chopped figs
Wet:
3 browning bananas
1 egg 1 cup plain Greek yogurt
½ cup applesauce
1 T vanilla
½ cup boiling water
Mix all dry ingredients except chopped figs or dates in a mixing bowl
Add in figs and stir until evenly distributed
Mash bananas
Mix all wet ingredients except water in a separate bowl from the dry
Add wet mixture to dry mixture and stir until combined
Pour boiling water over the batter, lightly stir in and allow to sit for approximately 3-5 minutes
Pour batter into cupcake tin with liners
Bake at 350° for 20-22 minutes
