Instant Pot Taco Soup
I feel like taco soup is one that you don't feel like needs to be reserved only for cold weather. It's delicious and refreshing and has a good amount of protein. This recipe has been years in the making, and I am excited to finally share it with you. Give it a try, and be sure to let me know what you think!

Instant Pot Taco Soup
Serves: 6-8 | Total Time: 60 minutes
Ingredients:
Avocado oil (or olive oil)
12 Roma tomatoes
1 can (1 2/3 cups) lite coconut milk
1 cup water
3 cloves garlic
7 green onions
3 cups black beans
2-3 chicken breasts (1.5-2 lbs)
4 Bell peppers
3 T Paprika
3 T Cumin
2 T Coriander
1 T Cinnamon
1 1/2 tsp salt
3 cups frozen corn (approx one 12 oz bag)
Optional Toppings:
Tortilla chips or strips
Cheese
Lime
Avocado
Finely chop garlic and green onions and saute in instant pot with avocado oil (or olive oi) for 1-3 minutes or until softened
Add whole tomatoes and 1 cup water, then lay chicken breasts on top of tomatoes
Cook on high pressure for 15 minutes
Chop peppers and rinse black beans. (In order to save time later, I like to measure all of the rest of the ingredients into a bowl too while I'm waiting. Then I can have everything cleaned up in advance.)
When the instant pot is done, do a quick pressure release, then remove the chicken and shred/cut into bite size pieces
Use an immersion blender to blend tomatoes, garlic, and water until smooth
Return chicken to instant pot and add corn (3 cups), black beans (3 cups), paprika (3 T), cumin (3 T), coriander (2 T), cinnamon (1 T), salt (1 1/2 tsp), bell peppers, and coconut milk, but do not stir them in
Set the pressure cooker to 0 minutes just to get everything up to temperature
Release the pressure using either quick release or natural release, give it a final stir, and serve it up with cheese (unless of course you're keeping it dairy free), lime, tortilla chips, avocado, or whatever toppings you like.
*This recipe has nothing spicy in it because my kids can't handle spicy food (and I'm kind of a wimp myself). You are more than welcome to add some finely chopped chili peppers, dried chili flakes, or a bit of cayenne pepper
