Gooey Brownie Cookies

I have a bit of a sweet tooth. Ok ok. I have a serious sweet tooth, so I love developing recipes that satisfy my cravings without using a ton of refined sugar and grains. These cookies have no allergens and are soft and gooey and so rich that one or two is usually enough to satisfy.

Gooey Brownie Cookies

Yield: 8 cookies | Prep Time: 8-10 minutes | Cook Time: 12-13 minutes | Cool Time: 20 minutes

1 heaped cup pitted *medjool dates

1/4 cup water

1/2 T vanilla

1/4 cup cocoa powder

1/4 cup unsalted butter or coconut oil

1/8 tsp sea salt

(You can stir dark chocolate chips in, but I usually leave them as is)

  1. Place dates and water into a pan and simmer for 3 minutes with the lid on

  2. While the dates are cooking, add all other ingredients into food processor, then add dates and remaining water from the pan

  3. Pulse until smooth

  4. Scoop onto parchment-lined baking sheet and smooth down so they aren't thick blobs

  5. Bake for 12-13 minutes at 350°. The outside should be starting to look dry and cracked

  6. Carefully slide the parchment paper onto a wire cooling rack and allow to cool for at least 20 minutes. The longer you let them sit, the better they'll hold together.

*I usually prefer to bake with deglet noor dates simply because they're cheaper. However, I found that this recipe really needs the richness of the medjool dates in order to best complement the flavor of the cocoa
