Frozen Banana Truffles

If you're looking for a fun and healthy summer snack that's easy to make, then look no further. These "truffles" have an ice creamy texture, just enough sweetness from the banana, and depth of flavor from the cinnamon and cocoa, making them a great, bite-size alternative to ice cream.
Frozen Banana Truffles
1 banana
1 1/2-2 cups peanut butter (try my recipe)
2 tsp cocoa powder
1/2 tsp cinnamon
Slice the banana into about 1/2 inch thick slices and place slices on baking sheet lined with wax paper
Put bananas in freezer for at least 45 minutes or until hardened and not sticky to the touch
Remove bananas from freezer, dip each slice in peanut butter until covered, then lay back on baking sheet 1-2 inches apart. If the banana gets to warm, the peanut butter won't stick, so you may have to return them to the freezer before finishing.
Mix cinnamon and cocoa powder and use sifter (or similar) to sprinkle powder mixture over bananas until the peanut butter is covered with a light layer.
Return to freezer for at least 1 hour (preferably overnight)
