Fried Spaghetti

My dad is a master at using up leftovers. One of my favorites was when we had leftover spaghetti noodles, and he would cook them up in a pan with some seasoning and call it fried spaghetti. We rarely have leftover noodles in my house now, but I like the meal so much that I'll cook up noodles just to make it. Use whatever you have lying around, and make it your own. Then comment below with your own variations.

Fried Spaghetti

Serves: 3-4 | Prep: 20 min | Cook Time: 15 min


2 chicken basil sausages

2 garlic cloves

1/2 pack leftover whole wheat spaghetti

1/2 T dried oregano

1/2 T dried basil

1 T dried parsley



olive oil

Parmesan cheese

1 zucchini

1 tomato or a handful of grape tomatoes

  1. If you don’t have leftover spaghetti lying around, be sure to cook some up and drain it in advance so it’s cool by the time you’re ready to cook

  2. Finely dice onions and garlic, and chop sausages into bite-size pieces

  3. Heat a pan on medium, and add a drizzle of olive

  4. Sauté sausage, onions, and garlic for about 2 minutes or until softened

  5. Add spaghetti and seasoning, and continue to sauté for about 5 minutes, occasionally tossing. You may want to add another drizzle of olive oil over the noodles

  6. Stir in Parmesan cheese

  7. Add zucchini to the pan, and use tongs to rotate noodles on top of the zucchini

  8. Cover and leave for about 5 minutes

  9. Cut tomatoes

  10. Once the zucchini is soft, toss in tomatoes and cook uncovered for 2 minutes
