Dark Chocolate No Bake Cookies
I've always loved a good chocolate-peanut butter no-bake, but they awaken the sugar addict in me. I can't stop eating them no matter how horrible they make me feel. Anyone else experience this? Well, I decided to alter this classic recipe a little, and I'm in love with the outcome. They have very little sugar, and a much richer (I dare say more sophisticated?) taste, and it's to die for. My toddler loves to help me make them, and the whole family loves to help me eat them (minus the baby, but that's more because we won't let him, than because he doesn't want to!). They require only 5 ingredients and about 15 minutes of your time and are so worth it!

Dark Chocolate No-Bake Cookies
Yield: 13 medium-large cookies | Time: 15 minutes

Ingredients:
1 heaping cup dark chocolate chips
1 cup homemade peanut butter (get my recipe here)
1 tsp vanilla
Sea salt
1 1/2 cup rolled oats
Melt chocolate chips in a pot on low heat, stirring constantly
Turn off heat, and add peanut butter and vanilla
Quickly stir until combined, then stir in oats
Scoop out spoonfuls onto a piece of parchment paper (I somehow always get 13), and sprinkle each with a tiny pinch of sea salt
Allow to cool (if you can resist)
