Apple Cinnamon Pancakes



Happy autumn, everyone! I know it's cliché, but fall really is–and always has been–my favorite season. What could be more fall-y than combining apples, cinnamon and pancakes? These pancakes are super moist and flavorful–you only need a small drizzle of real maple syrup or sprinkle of cinnamon sugar to bring out the flavor. And as an added bonus, these pancakes are vegan-friendly as well as tasty for anyone who's not vegan too!

Apple Cinnamon Pancakes

1 1/2 C wheat flour

2 C grated apples (about 4 small apples)

3 t baking powder

1/8 t salt

1 T vanilla

1 1/4 cup water

1 T cinnamon

1/2 C applesauce (I recommend TreeTop because it has no added sweeteners)

  1. Grate apples

  2. Turn pan on to medium heat and grease if necessary

  3. While pan is heating up, mix together flour (1 1/2 C), baking powder (3 tsp), salt (1/8 tsp) and cinnamon (1T)

  4. Add water (about 1 1/4 C), applesauce (1/2 C), vanilla (1T) and grated apples and stir until combined

  5. Scoop out 1/4 C portions of batter and pour onto warm pan

  6. Cover the pan and cook for about 5 minutes on each side (the top will look dry when it's time to flip them)
