Apple Cinnamon Oatmeal

There's something nostalgic and comforting about a bowl full of mush: the smell, the

warmth, the lack of chewing required... The problem is my husband complains oatmeal doesn't fill him up. Thus the birth of this recipe. It's fast, filling, and free of added sugars. What more could you want to start a crisp, fall morning?

Apple Cinnamon Oatmeal

Yield: 4 cups | Prep Time: 5 min | Cook Time: 10 min

1 cup rolled oats

2 1/4 cups water

1/2 cup deglet noor dates

1 apple

2 tsp cinnamon

1/2 T vanilla

1/2 cup almond flour

1/4 tsp sea salt

Almond milk

  1. Stir oats, water, salt, cinnamon, vanilla together in Instant Pot

  2. Set to pressure cook on high for 0 minutes with 2-5 minute NPR

  3. Finely chop dates and apples (or grate)

  4. Stir in apples, almond flour, and dates

  5. Serve up, adding a splash of almond milk to individual servings
