Almond Banana Bread (with Streusel)

We buy a lot of bananas. I mean A LOT of bananas. For a family of only two adults and two toddlers, it's pretty impressive. But sometimes we don't get through all of them before they go brown. If that ever happens to you, try this banana bread. In fact, even if that never happens to you, you should set three bananas aside specifically for this purpose. The streusel topping is crunchy and sweet, and the bread will melt in your mouth!

Almond Banana Bread (with Streusel)

Serves: 8-10 | Prep Time: 15-20 minutes | Cook Time: 45 minutes | Cool Time: 1 hr

Ingredients:

Topping:

1/4 tsp cinnamon

pinch sea salt

1/2 cup almonds

1 T coconut oil

1/4 cup pitted deglet noor dates


Bread:

3 cups almond flour

2 1/2 tsp baking powder

1/4 tsp sea salt

1 T cinnamon

1 T vanilla

3 bananas

3/4 heaping cup pitted deglet noor dates

3/4 cup water


  1. Preheat oven to 350°

  2. Simmer dates and water in small saucepan on high for 5-7 minutes

  3. While dates are simmering, use a hand mixer to mash bananas in a large bowl

  4. Pour dates and water into food processor and pulse until smooth

  5. Add date paste and vanilla to bananas and mix

  6. Add almond flour, baking powder, sea salt, and cinnamon, and mix until combined (it will resemble a crumbly cookie dough)

  7. Line a 9inx5in bread pan with parchment, then transfer dough to pan and use a spatula to smooth out the top

  8. Fold the remaining parchment over (or get another piece) to cover the top, and bake for 30-35 minutes

  9. While the bread is baking, get started on the streusel topping

  10. Melt 2 T coconut oil

  11. Finely chop 1/2 cup almonds

  12. Finely chop 1/4 cup dates

  13. Stir chopped dates, chopped almonds, 2 T melted coconut oil, 1/4 tsp cinnamon, a pinch of sea salt until combined

  14. When the 35 minutes of baking are up, remove the bread from the oven, pour the topping over the top and gently push it down with a spatula

  15. Bake uncovered for an additional 15 minutes or until topping looks lightly toasted

  16. Remove from oven and let sit for about 5 minutes. Then use the parchment paper to lift the bread out of the pan and set on a cooling rack to cool for an hour.
