Coconut Cinnamon Rolls

If you need a sweet treat for your Easter celebration (or any other day, frankly), give this recipe a try. These cinnamon rolls are gooey, sweet, and satisfying without leaving you with a sugar high or a feeling of regret.

Serves: 12 | Active Prep Time: 30 minutes | Cook Time: 30 minutes


1 1/2 Cup dates

1 1/2 cup water

1 1/2 T cinnamon

1 (1/2) tsp vanilla

1 pinch sea salt

  1. Bring water and dates to a simmer for 5-10 minutes.

  2. Pour dates and water into food processor, and add vanilla, 1 1/2 T cinnamon and sea salt. Process until resembling a thick paste (Make sure there are no remaining pits and you start with a pulse otherwise you will find yourself and your kitchen covered in sticky, brown date water)

  3. Allow to cool while making the dough


1 Cup white flour*

1 Cup wheat flour*

1/4 tsp salt

1/4 tsp baking soda

1/2 tsp cream of tartar**

1(1/2) tsp cinnamon

1/3 Cup coconut oil

1/2 C coconut milk

Approximately 1/2 C ice cold water

*Since I've started grinding my own wheat, I've also made these with 2 cups of home-ground white wheat flour instead of 1 cup of white flour and 1 cup of wheat flour. You could, of course, also choose to simply use 2 cups of plain white flour.

**If you don't have cream of tarter, you can use 1 tsp baking powder as a substitution for cream of tartar and baking soda

  1. Stir flours, salt, baking soda, cream of tarter and cinnamon until combined

  2. Cut in coconut oil

  3. Add coconut milk, and then slowly fold in ice water until a dough forms (you may not use the entire 1/2 cup).

  4. Roll out dough into a rectangular shape about 1/4 in thick

  5. Spread date filling onto dough

  6. Roll dough lengthwise and then cut perpendicularly into twelve 1-inch thick rolls (using a knife, pastry knife, or, my favorite, a piece of floss)

  7. Lay in baking dish, and bake for approx. 30 minutes at 375°

1 tsp vanilla

1 pinch of salt

  1. Bring water and dates to a simmer until the dates look like they're starting to peel/fall apart (5-10 minutes)

  2. Pour dates/water, coconut milk, vanilla, and salt into food processor, and process until smooth.

  3. Pour over cinnamon rolls and enjoy!
