Simple Whole-Wheat Biscuits

Biscuits are great at any time of day—breakfast with eggs, a snack with some butter and jam, dinner as a side with pasta. Everyone loves biscuits; in fact, Southerners love biscuits so much that they named a minor league baseball team in Alabama the Biscuits! But whether you're a baseball fan or not, you should give these a try. They are simple to make and have a hearty, grainy taste with a soft and flaky inside.

Simple, Whole-Wheat Biscuits

1 Cup white flour

1 Cup wheat flour

1 tsp baking powder

½ tsp salt

1/3 Cup coconut oil (solid)

1/3 Cup plain Greek yogurt

2/3 Cup milk

  1. Combine flours, baking powder and salt

  2. Cut in coconut oil either with a fork or by crumbling with your fingers until the mixture looks like fine bread crumbs.

  3. Stir in yogurt and milk

  4. Pour out onto floured surface and knead just until combined

  5. Roll out to about 1 inch thick

  6. Cut into circles (should make about 12-15)

  7. Re-roll dough scraps once and cut remaining dough into circles

  8. Place circles onto greased cookie sheet (or line with parchment paper or silpat)

  9. Bake 375° for 12-15 minutes

Knead dough until combined

Cut out 12-15 circles
