Banana Coconut Muffins

Surprise Mom this Mother's Day with these deliciously rich and moist muffins. They are gluten free, dairy free and have less than a teaspoon of added sugar per muffin, but they're so full of flavor that anyone will enjoy them.

Banana Coconut Muffins

2/3 cup coconut flour

11/3 cup almond flour

1 tsp baking soda

¼ tsp salt

1 can coconut milk (only the solid part)

1½ cup banana (approx. 3-4 large bananas)

2 T molasses

1 T vanilla

2 eggs

¼ cup dessicated coconut

  1. Mix flour, baking soda, and salt

  2. Mash bananas

  3. Separate the liquid from the solid part of the coconut milk. You should have about a cup of the solid. Discard the liquid.

  4. Add coconut milk, bananas, molasses, vanilla and eggs and mix until combined

  5. Pour into muffin tins almost full

  6. Bake for 15 minutes at 375°
