Garlic-Herb Hash Browns
Need a budget friendly brunch? Have extra potatoes laying around? Looking for a way to switch up breakfast? Get ready for sophisticated hash browns. These are flavorful without being loaded with salt, and they're baked rather than fried in a lot of oil. Serve them up with some scrambled or fried eggs and fruit.

Garlic-Herb Hash Browns
8 potatoes (medium sized)
2 generous pinches salt
1½ tsp finely chopped rosemary or thyme
1 large/2 medium cloves garlic (about 1 tsp finely chopped)
olive oil
pepper
Peel potatoes while waiting for a pot of water to come to a boil
Boil potatoes for 5 minutes then allow to cool enough to be able to touch them
Grate potatoes (a food processor expedites this process quite nicely)
Spread grated potatoes onto baking sheet
Chop garlic and herbs and, using your hands, combine with salt, pepper, olive oil and potatoes.
Bake at 425° F for 15-20 minutes or until the bottom is browned
Flip the potatoes over and bake for an additional 10-15 minutes
