No Packet Taco Seasoning

Hold the seasoning packet! Store-bought taco seasonings can have yeast extract, sugar, silicon dioxide and other preservatives, but you can have quick, great flavor without all the extra fill-ins. This recipe uses chicken, but you could use this seasoning for ground hamburger, or even chickpeas, and stay tuned for next week's recipe to use this with.

No Packet Taco Seasoning

1 Chicken breast

1 small can tomatoes

1 clove garlic

¼ tsp cayenne pepper

¼ tsp smoked paprika

¼ tsp cumin

¼ tsp coriander

salt pepper

  1. Boil chicken breast until cooked through (about 20-25 minutes)

  2. Pour tomatoes and all seasonings into blender and blend until smooth

  3. Shred chicken with two forks

  4. Pour tomato mixture and shredded chicken in pan and allow to simmer on medium low heat until sauce has reduced
