Quick and Easy Flatbread

Give this recipe a try, and in minutes you'll have a delicious, savory flatbread to use an infinite number of ways. Fold it in half, and fill it with meat, veggies, hard-boiled eggs, dressing or hummus for an easy and complete lunch. Use it as a side for curry or other dinners. Throw some tomato sauce and cheese on it for a quick personal pan pizza. Or get creative and let me know what you come up with!

Quick and Easy Flatbread

1 cup wheat flour

1/2 cup white flour

1 tsp baking powder

1/2 tsp salt

1/2 clove garlic

1 tsp thyme

1/2 cup Greek yogurt

1/4-1/3 cup water

  1. Add all ingredients except yogurt and water to a food processor and mix until combined

  2. Add in yogurt and mix until combined

  3. While mixing, slowly add water until dough forms into a ball

  4. Dust surface and rolling pin with flour

  5. Divide dough into approx. 6 balls

  6. Roll out each ball to about 1/8 inch thick

  7. Heat a pan on medium heat and pour a splash of olive oil (optional)

into pan

  1. Cook the flatbread for about 1 minute on each side.
