Lemony Roasted Broccoli
Here's a flavor-packed side dish that will make it easy to get an extra serving (or two) of vegetables on your dinner plate.
Lemony Roasted Broccoli
2 heads of broccoli
1-2 pieces of bread (old heels work great)
3 T Parmesan cheese
1 small lemon
Olive oil
Salt
Pepper
1/2 - 1 clove garlic (depending on size of clove)

Thaw and dry the broccoli if you’re using frozen. Cut into pieces of desired size if you’re using fresh.
Put broccoli on baking tray and squeeze juice of ½ lemon onto it.
Add a drizzle of olive oil and mix by hand
Put bread into food processor and process until there are no large pieces of bread
Add garlic, 2 T grated Parmesan, lemon zest, a drizzle of olive oil, pinch of salt, a couple grinds of pepper to food processor and mix briefly
Pour breadcrumb mixture onto broccoli and use your hands to mix everything together
Add a last sprinkle of Parmesan
Bake at 375° F for about 15 minutes or until golden brown
